Ingredients

  • 6 medium green peppers
  • 3 Tbsp. olive oil, divided

  • 2 hard-cooked eggs, chopped

  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut off the tops of the green peppers and remove the seeds.
  3. Heat 1 tablespoon of olive oil in a skillet.
  4. Add minced garlic and cook for 1 minute.
  5. In a bowl, combine all remaining ingredients except 2 tablespoons of olive oil and water; mix well.
  6. Stuff the prepared peppers with the mixture.
  7. Place the stuffed peppers in a baking dish, drizzle with the remaining 2 tablespoons of olive oil and water.
  8. Bake in the preheated oven for 30 minutes or until peppers are tender and filling is heated through.
