Ingredients

  • bacon
  • 2 carrots
  • 2 stalks celery
  • 1/2 bell pepper
  • 1 onion
  • garlic cloves
  • 2 bottles clam juice
  • 1/2 tsp. pepper
  • bay leaf
  • 1/2 tsp. Tabasco
  • 2 tsp. Worcestershire
  • 1 tsp. thyme
  • 4 c. whipping cream
  • 1 1/2 lb. red potatoes
  • 50 oz. clams, chopped

Instructions

  1. Cook bacon until crispy.
  2. Drain.
  3. Saute carrots, celery, onion, pepper and garlic in 2 tablespoons bacon drippings until soft.
  4. Add potatoes (1/2-inch cubes) and add clam juice.
  5. Boil, then simmer until tender.
  6. Add seasoning, clams and bacon.
  7. Heat and serve.
