Ingredients

  • 7 lb. goat meat (ribs)

  • 4 oz. liver sausage
  • 1/4 c. dark soy sauce
  • juice of half lemon
  • 3 bay leaves
  • 3 potatoes, peeled and cut in wedges
  • 1 c. green peas
  • 1 c. garbanzo beans
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 1 red bell pepper, cut in strips
  • 2 Tbsp. chili paste (Sambal-Bajak)
  • 1 tsp. fresh ground pepper
  • 1/2 c. olive oil
  • 1 tsp. salt

Instructions

  1. In a large pot, put goat meat, ginger, and enough water; boil until tender.
  2. Discard the liquid and ginger, then set the goat meat aside.
  3. In the same pot, heat olive oil over medium heat.
  4. Sauté sliced onion and crushed garlic until fragrant.
  5. Add tomato sauce, pineapple juice, liver sausage, soy sauce, lemon juice, bay leaves, chili paste, and ground pepper.
  6. Bring to a boil, then add the cooked goat meat back into the pot.
  7. Simmer for about 1 hour to allow flavors to meld.
  8. Add peeled and wedge-cut potatoes, green peas, garbanzo beans, and red bell pepper strips.
  9. Cook until vegetables are tender, about 20 minutes.
  10. Season with salt to taste and serve hot.
