Ingredients

  • 2 lb. lean beef with bone
  • 1 large disjointed hen
  • 1 lb. veal
  • 4 qt. water
  • 1 pt. corn
  • 2 c. diced potatoes
  • 2 c. diced onions
  • 1 pt. butter beans
  • 3 carrots
  • 1 stalk sliced celery
  • 1 qt. tomatoes
  • 2 green peppers
  • 1 pt. sliced okra
  • 4 Tbsp. salt
  • 1 tsp. Tabasco

Instructions

  1. Simmer the meats (beef, hen, veal) until well done.
  2. Defat the liquid and remove the meat from the bones.
  3. Add the remaining ingredients to the pot.
  4. Cook very slowly for at least 4 hours, stirring occasionally.
  5. Add water from time to time to prevent sticking and maintain desired thickness.
  6. Season with salt and Tabasco to taste.
  7. The stew should be very thick and flavorful before serving.
