Lasagna Milanese
Layers of wide noodles, seasoned meat, spinach, and cheeses create a hearty, flavorful lasagna with Italian herbs, perfect for family dinners or entertaining guests. Rich and satisfying.
Ingredients
- 8 oz. wide noodles ⓘ
- frozen chopped spinach ⓘ
- 1 medium onion ⓘ
- 1 clove garlic ⓘ
- 2 Tbsp salad oil or olive oil ⓘ
- 1 lb. ground beef ⓘ
- 3 oz. can mushrooms ⓘ
- 3 oz. can tomato paste ⓘ
- 8 oz. can tomato sauce ⓘ
- 1 bay leaf ⓘ
- 2 tsp. salt ⓘ
- 2 tsp. oregano ⓘ
- 2 eggs ⓘ
- 1/4 cup chopped parsley ⓘ
- 1 cup cottage cheese ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1 tsp. basil ⓘ
- sharp Cheddar cheese ⓘ
Instructions
- Cook and drain the wide noodles.
- Thaw and drain the frozen chopped spinach.
- In a medium frying pan, brown the chopped onion and minced garlic in 1 tablespoon of oil.
- Add ground beef and cook until browned.
- Stir in the mushrooms (including liquid), tomato paste, crumbled bay leaf, 1 teaspoon of salt, and oregano.
- Simmer the meat mixture for 15 minutes.
- Beat 2 eggs in a bowl; pour over the rinsed noodles and mix well.
- Add the second beaten egg, spinach, 1 tablespoon oil, chopped parsley, cottage cheese, Parmesan cheese, 1 teaspoon salt, and basil. Mix well.
- Pour half of the tomato meat mixture into a greased oblong shallow dish.
- Layer half of the noodles on top of the sauce.
- Spread the spinach and cheese mixture over the noodles.
- Repeat with remaining noodles and top with the rest of the tomato mixture. Cover.
- Bake in a 350°F oven for 45 minutes.
- Remove from oven, arrange strips of cheese on top, and bake until cheese is melted, about 5 minutes.
