Lasagna Milanese

Ingredients

  • 8 oz. wide noodles
  • frozen chopped spinach
  • 1 medium onion
  • 1 clove garlic
  • 2 Tbsp salad oil or olive oil
  • 1 lb. ground beef
  • 3 oz. can mushrooms
  • 3 oz. can tomato paste
  • 8 oz. can tomato sauce
  • 1 bay leaf
  • 2 tsp. salt
  • 2 tsp. oregano
  • 2 eggs
  • 1/4 cup chopped parsley
  • 1 cup cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. basil
  • sharp Cheddar cheese

Instructions

  1. Cook and drain the wide noodles.
  2. Thaw and drain the frozen chopped spinach.
  3. In a medium frying pan, brown the chopped onion and minced garlic in 1 tablespoon of oil.
  4. Add ground beef and cook until browned.
  5. Stir in the mushrooms (including liquid), tomato paste, crumbled bay leaf, 1 teaspoon of salt, and oregano.
  6. Simmer the meat mixture for 15 minutes.
  7. Beat 2 eggs in a bowl; pour over the rinsed noodles and mix well.
  8. Add the second beaten egg, spinach, 1 tablespoon oil, chopped parsley, cottage cheese, Parmesan cheese, 1 teaspoon salt, and basil. Mix well.
  9. Pour half of the tomato meat mixture into a greased oblong shallow dish.
  10. Layer half of the noodles on top of the sauce.
  11. Spread the spinach and cheese mixture over the noodles.
  12. Repeat with remaining noodles and top with the rest of the tomato mixture. Cover.
  13. Bake in a 350°F oven for 45 minutes.
  14. Remove from oven, arrange strips of cheese on top, and bake until cheese is melted, about 5 minutes.
