Layered Turkey Loaf
A flavorful layered turkey loaf packed with vegetables and herbs, baked to perfection. Perfect for family dinners, offering moist turkey with fresh vegetable accents.
Ingredients
- 2 Tbsp vegetable oil ⓘ
- 1 medium zucchini, shredded ⓘ
- 1 large carrot, shredded ⓘ
- 1 large red or green bell pepper, chopped fine ⓘ
- 1 large onion, chopped fine ⓘ
- 2 garlic cloves, crushed ⓘ
- 2 lb ground turkey ⓘ
- 1 1/2 cup rye bread crumbs ⓘ
- 2 Tbsp chopped parsley ⓘ
- 1 tsp salt ⓘ
- 3/4 tsp ground thyme ⓘ
- 1/2 tsp pepper ⓘ
- 1 egg, lightly beaten ⓘ
Instructions
- Preheat oven to 350°F.
- Lightly grease a 9 x 5 x 3-inch loaf pan.
- In a large skillet, heat vegetable oil over medium-high heat.
- Stir in shredded zucchini, shredded carrot, chopped bell pepper, chopped onion, and crushed garlic.
- Saute until vegetables are softened, about 4 to 5 minutes; set aside.
- In a large bowl, combine ground turkey, rye bread crumbs, chopped parsley, salt, ground thyme, pepper, and lightly beaten egg.
- Press one-third of the turkey mixture into the prepared loaf pan.
- Spread half of the vegetable mixture over the turkey, pressing down gently.
- Repeat with remaining turkey mixture and vegetables, ending with the turkey layer on top.
- Cover the pan with foil and bake until the loaf has shrunk from the edges and juices run clear, about 1 1/2 hours.
- Let stand for 10 minutes, then drain excess juices.
- Invert the pan onto a serving plate to remove the loaf.
- Garnish with zucchini and carrot slivers, if desired.
