Ingredients

  • 2 slightly beaten eggs
  • 2 cups sugar
  • 1/2 cup oil
  • 1 cup solid packed pumpkin
  • 2 1/4 cups flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped cranberries
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Combine eggs, sugar, oil, and pumpkin; mix well.
  2. In a large bowl, combine flour, pumpkin pie spice, baking soda, and salt; make a well in the center.
  3. Pour the pumpkin mixture into the well; stir just until dry ingredients are moistened.
  4. Stir in cranberries and walnuts if using.
  5. Spoon batter into two greased and floured 8 x 3 3/4 x 2 1/2-inch aluminum loaf pans.
  6. Bake in a moderate oven (350°F) for 60 minutes or until a toothpick inserted in the center comes out clean.
