Ingredients

  • 5 eggs
  • 2 cups sugar
  • 2 cups oil
  • 2 cups pumpkin
  • 2 large carrots, grated
  • 4 medium carrots, grated
  • 1 cup quick oats
  • 2 cups pecans, chopped
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 tablespoon cinnamon
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 teaspoon salt

Instructions

  1. Pour boiling water over raisins to prepare them, then drain.
  2. Beat eggs slightly in a mixing bowl.
  3. Add sugar, oil, and pumpkin to the eggs and beat thoroughly.
  4. Take approximately half of this mixture and mix with the quick oats, then let it stand.
  5. Add all dry ingredients (flour, cinnamon, baking powder, baking soda, salt) to the original mixture and blend until smooth.
  6. Add the oat mixture, vanilla, grated carrots, and chopped pecans to the batter.
  7. Fold in the raisins if using.
  8. Fill greased muffin cups two-thirds full with batter and sprinkle tops with brown sugar.
  9. Bake at 375°F (190°C) for 15 to 17 minutes until golden and a toothpick inserted comes out clean.
  10. Let muffins cool slightly before removing from pans; these freeze well for later enjoyment.
