Ingredients

  • 7 oz. macaroni
  • 6 3/4 oz. cans chunk ham
  • 16 oz. can sauerkraut
  • 3 c. milk
  • 3 Tbsp. Dijon mustard
  • 1 c. diced, buttered rye bread
  • 4 oz. can chopped pimiento
  • 1/2 c. sliced green onion
  • 4 Tbsp. butter
  • 4 Tbsp. flour
  • 2 c. grated Swiss cheese
  • 1/4 tsp. pepper

Instructions

  1. Prepare the macaroni noodles according to package instructions; drain and set aside.
  2. In a large bowl, combine the cooked macaroni, diced ham, drained pimiento, and sliced green onions.
  3. In a medium saucepan, melt the butter over medium heat; stir in the flour to make a roux.
  4. Gradually whisk in the milk, stirring constantly until the mixture is slightly thickened.
  5. Remove the sauce from heat and stir in the grated Swiss cheese, Dijon mustard, and pepper until smooth.
  6. Mix the cheese sauce into the macaroni mixture until well combined.
  7. In a 3-quart baking dish, layer half of the macaroni mixture, then spread the sauerkraut over it, and top with the remaining macaroni mixture.
  8. Garnish with diced buttered rye bread pieces.
  9. Bake in a preheated oven at 350°F (175°C) for 30 minutes until bubbly and golden.
