Mae Laws Relish is a tangy, sweet and savory vegetable relish with cucumbers, cabbage, and peppers, perfect for adding zest to salads and served alongside meats.

Ingredients

  • 3 qt. unpeeled cucumbers, sliced
  • 4 c. chopped cabbage
  • 1 large diced green pepper
  • 2 tsp. mustard seed
  • 5 c. white sugar
  • 2 c. whole kernel corn and chopped carrots
  • 1 qt. chopped onions
  • 3 cloves garlic, chopped
  • 1/3 c. uniodized salt
  • 1/2 tsp. celery seed
  • 3 c. white vinegar

Instructions

  1. Combine cucumbers, onions, cabbage, garlic, green pepper, and salt in a large bowl.
  2. Cover with ice; let stand for 3 hours.
  3. Drain the vegetables thoroughly.
  4. Bring mustard seed, celery seed, sugar, vinegar, and turmeric to a boil in a saucepan.
  5. Pour the boiling mixture over the drained vegetables and bring to a boil again.
  6. Add corn and chopped carrots (total 2 cups); stir well.
  7. Transfer the relish into sterilized jars.
  8. Process the jars in a boiling water bath for 20 minutes.
