- Combine cucumbers, onions, cabbage, garlic, green pepper, and salt in a large bowl.
- Cover with ice; let stand for 3 hours.
- Drain the vegetables thoroughly.
- Bring mustard seed, celery seed, sugar, vinegar, and turmeric to a boil in a saucepan.
- Pour the boiling mixture over the drained vegetables and bring to a boil again.
- Add corn and chopped carrots (total 2 cups); stir well.
- Transfer the relish into sterilized jars.
- Process the jars in a boiling water bath for 20 minutes.
