Ingredients

  • 3 lb. turkey thighs
  • 3 large carrots
  • 3 celery stalks
  • 6 new potatoes
  • 2 onions
  • 2 Tbsp. crushed basil
  • 1 tsp. crushed oregano
  • 4 chicken bouillon cubes
  • 1 lb. dry kidney beans
  • 2 cloves garlic
  • 1 (28 oz.) can diced tomatoes
  • 3 1/2 qt. water
  • 1/2 lb. mushrooms
  • 2 medium zucchini
  • 2 c. small pasta shells
  • grated Parmesan cheese

Instructions

  1. Combine turkey thighs, carrots, celery, potatoes, onions, basil, oregano, bouillon cubes, kidney beans, garlic, tomatoes, and water in a 10-quart pan.
  2. Bring to a boil, then reduce heat and simmer for 1 1/2 hours.
