Ingredients

  • 1 cup chopped onion
  • 1 1/2 cups sliced carrots
  • 1 tablespoon olive oil
  • 1 1/2 cups sliced green beans
  • 1/2 cup uncooked macaroni
  • 6 cups defatted chicken broth
  • 1/2 teaspoon salt
  • 1/4 cup tomato paste
  • 2 cloves garlic, crushed
  • 2 tablespoons fresh basil, chopped or 1 1/2 teaspoons dried basil
  • 6 tablespoons grated Parmesan cheese
  • 1 tablespoon vegetable oil
  • 1 tablespoon cornstarch or 2 tablespoons flour
  • 2 tablespoons cold water
  • 2 cups drained, canned or cooked white beans

Instructions

  1. In a large saucepan, sauté onion and carrots in olive oil until the onion is translucent.
  2. Add green beans, macaroni, chicken broth, and salt. Bring to a boil.
  3. Reduce heat and simmer about 10 minutes or until vegetables are tender and macaroni is cooked.
  4. Stir in tomato paste, crushed garlic, basil, and drained white beans. Heat through.
  5. Optional: stir in grated Parmesan cheese before serving.
