Ingredients

- 1 1/2 cups sliced carrots ⓘ
- 1 tablespoon olive oil ⓘ
- 1 1/2 cups sliced green beans ⓘ
- 1/2 cup uncooked macaroni ⓘ
- 6 cups defatted chicken broth ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 cup tomato paste ⓘ
- 2 cloves garlic, crushed ⓘ
- 2 tablespoons fresh basil, chopped or 1 1/2 teaspoons dried basil ⓘ
- 6 tablespoons grated Parmesan cheese ⓘ
- 1 tablespoon vegetable oil ⓘ
- 1 tablespoon cornstarch or 2 tablespoons flour ⓘ
- 2 tablespoons cold water ⓘ
- 2 cups drained, canned or cooked white beans ⓘ
Instructions
- In a large saucepan, sauté onion and carrots in olive oil until the onion is translucent.
- Add green beans, macaroni, chicken broth, and salt. Bring to a boil.
- Reduce heat and simmer about 10 minutes or until vegetables are tender and macaroni is cooked.
- Stir in tomato paste, crushed garlic, basil, and drained white beans. Heat through.
- Optional: stir in grated Parmesan cheese before serving.
