Meat eggrolls, also known as lumpia, are a delightful fusion of savory ground pork, crunchy vegetables, and spices wrapped in crispy pastry. Ingredients

  • 2 lb. ground pork
  • 2 c. chopped carrots
  • 1 c. chopped bell pepper
  • 1/2 c. onion
  • 1/2 tsp. garlic powder
  • 1 Tbsp. salt
  • 1 egg, beaten
  • 1 c. raisins (optional)
  • oil for deep frying
  • eggroll wrappers
  • eggroll wrappers (available in Asian markets)

Instructions

  1. Mix all ingredients, except oil and catsup.
  2. Put a small amount of filling inside each eggroll wrapper.
  3. Roll up the filled wrapper, but before you get to the end, brush the wrapper end with beaten egg so that the wrapper will stick together.
  4. Deep fry until golden brown.
  5. Serve with catsup for dipping.
