Instructions

  1. Preheat oven to 425°F.
  2. Use a small loaf pan approximately 2 1/2 x 4 1/2 x 8 1/2 inches.
  3. Put the ground veal and ground pork into a large mixing bowl.
  4. In a small skillet, heat butter and add chopped onion and green pepper.
  5. Cook, stirring, until wilted.
  6. Add sliced mushrooms and cook until wilted.
  7. Add drained pimentos and cook until liquid evaporates.
  8. Add the mushroom mixture to the meat along with heavy cream, lightly beaten egg, bread crumbs, chopped parsley, rosemary, salt, and pepper.
  9. Mix well and pack into the loaf pan, smoothing the top.
  10. Bake for 40 to 45 minutes.
  11. Remove from oven and let rest for 10 to 15 minutes before serving.
