Ingredients

  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 4 cups hot water (150 to 160 degrees)
  • 1 (26 oz) jar meatless spaghetti sauce
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup frozen yellow and white corn, thawed
  • 1 cup salsa
  • 1 (4 oz) can chopped green chiles
  • 1 tablespoon chili powder
  • 1/4 teaspoon salt

Instructions

  1. In a large non-stick skillet, cook ground beef and chopped onion over medium heat until meat is no longer pink; drain excess fat.
  2. Using a slotted spoon, remove the beef and onion mixture to several layers of white paper towels and let stand for 1 minute.
  3. Blot the beef mixture with additional paper towels to remove excess fat.
  4. Transfer the beef mixture to a fine mesh strainer over a 1 1/2-quart bowl and pour hot water over it.
  5. Drain for 5 minutes.
  6. In a large saucepan, combine meatless spaghetti sauce, rinsed and drained black beans, diced tomatoes, thawed corn, salsa, chopped green chiles, chili powder, and salt.
  7. Stir in the drained beef mixture.
  8. Bring the mixture to a boil, then reduce heat and simmer uncovered for 10 to 15 minutes.
  9. Serve over cooked spaghetti.
