Ingredients

  • 1/2 cup flour
  • 1 1/2 cups cornmeal
  • 2 teaspoons sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups buttermilk
  • 1 teaspoon salt
  • 7 ounces mild jalapeno peppers, chopped
  • 1 1/2 cups minced onions
  • 2 eggs
  • 1 cup sharp Cheddar cheese
  • 3 tablespoons bacon drippings

Instructions

  1. Combine all dry ingredients except salt in a large bowl.
  2. Heat buttermilk with salt until hot.
  3. Add chopped jalapeno peppers and minced onions to the hot buttermilk mixture.
  4. Cover and cook over low heat for 30 minutes.
  5. Allow the mixture to cool.
  6. In a separate bowl, beat the eggs and stir in the shredded Cheddar cheese.
  7. Gradually blend the dry ingredients, cooled liquids, cheese mixture, and bacon drippings until smooth.
  8. Pour the batter into a well-greased 9-inch square baking pan.
  9. Bake in a preheated 425°F oven for 40 to 50 minutes until golden and cooked through.
