Morning Cookies
Morning Cookies are wholesome, oatmeal-based treats with cinnamon, raisins, and walnuts, perfect for a nutritious breakfast or snack that appeals to all ages.
Ingredients
- 1/4 cup margarine or butter ⓘ
- 1/2 cup brown sugar ⓘ
- 3/4 cup whole wheat flour ⓘ
- 3/4 cup applesauce ⓘ
- 1/2 cup oats ⓘ
- 1/3 cup wheat bran ⓘ
- 1/4 cup nonfat dry milk powder ⓘ
- 1 egg white ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/4 teaspoon baking powder ⓘ
- 1/4 teaspoon salt ⓘ
- 1/8 to 1/4 teaspoon cloves ⓘ
- 1/2 cup raisins ⓘ
- 1/4 cup chopped walnuts ⓘ
Instructions
- In a bowl, beat margarine (or butter) and brown sugar until well combined.
- Add remaining ingredients (except raisins and nuts) and beat on low speed until mixed.
- Stir in raisins and chopped walnuts.
- Spray a baking sheet with nonstick spray.
- Drop tablespoon-sized dollops of dough onto the baking sheet and spread so each cookie is about 2 inches across.
- Bake at 375°F (190°C) for 10 minutes or until set.
- Allow cookies to cool.
- Spread the bottom of half of the cookies with cream cheese or peanut butter, then top with the remaining cookies to form sandwiches.
- Store in the refrigerator.
