Ingredients

  • 1 onion, diced
  • 1/2 green pepper, diced
  • 3 tsp margarine
  • 5 slices Provolone cheese
  • 1/2 cup milk
  • 3 dashes pepper
  • 3 dashes hot pepper (optional)
  • 1/2 lb chopped mushrooms
  • 1/2 red pepper, diced
  • 2 eggs per person
  • 1 diced tomato
  • sweet or Italian sausage to taste

Instructions

  1. Heat a large skillet on high.
  2. Fry diced onion and green pepper in margarine until softened.
  3. Add chopped mushrooms and cook until browned.
  4. Add cooked sausage to the skillet.
  5. In a bowl, scramble eggs with milk, pepper, and hot pepper if desired.
  6. Pour the eggs into the skillet with vegetables and meat, and let simmer for 2 to 4 minutes.
  7. Preheat the broiler to 350°F.
  8. Place slices of Provolone cheese over the eggs, covering most of the surface.
  9. Top the cheese with diced tomatoes.
  10. Put the skillet under the broiler for 2 to 4 minutes until the cheese is melted and slightly browned.
