Creamy mushroom macaroni combines tender pasta with savory sautéed mushrooms and a cheesy breadcrumb topping, making it a comforting dish perfect for family dinners or casual gatherings.

Ingredients

  • 1 onion, chopped
  • 1 lb. mushrooms, sliced
  • 2 Tbsp. oil
  • 1/4 lb. butter
  • 3 Tbsp. flour
  • 2 c. milk
  • salt
  • pepper
  • pinch of cayenne pepper
  • 1/2 c. dry bread crumbs
  • 1/4 c. grated Parmesan cheese
  • 3 1/2 c. cooked macaroni

Instructions

  1. Preheat oven to 350°F.
  2. Sauté chopped onion and sliced mushrooms in 1 tablespoon oil and 3 tablespoons butter for about 15 minutes.
  3. Add another 3 tablespoons butter and stir until melted.
  4. Stir in flour until smooth.
  5. Gradually stir in milk.
  6. Add 1 1/2 teaspoons salt, 1/2 teaspoon pepper, and a pinch of cayenne pepper.
  7. Bring to a boil and cook for 1 minute.
  8. Stir in cooked macaroni and 2 tablespoons chopped parsley.
  9. Transfer mixture to a 2-quart casserole dish.
  10. Melt remaining 2 tablespoons butter.
  11. Combine bread crumbs, grated Parmesan cheese, 1 tablespoon chopped parsley, 1 tablespoon oil, and melted butter.
  12. Sprinkle the breadcrumb mixture on top of the casserole.
  13. Bake until browned, about 25 minutes.
