Ingredients

  • 2 cups pitted dates, cut up
  • 1 1/2 cups strong hot coffee
  • 2 tablespoons butter or margarine
  • 3/4 cup granulated sugar
  • 3/4 cup dark brown sugar, packed
  • 1 teaspoon salt
  • 1 extra large egg
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 cup chopped nuts
  • 1 teaspoon vanilla

Instructions

  1. Pour boiling hot coffee over the pitted dates and let cool.
  2. Add butter, granulated sugar, dark brown sugar, and salt to the date mixture and stir to blend well.
  3. Sift all dry ingredients: flour, baking soda, and cream of tartar.
  4. Add the egg to the cooled date mixture and blend well.
  5. Add the dry ingredients to the wet mixture and mix well again.
  6. Stir in chopped nuts and vanilla.
  7. Spoon the batter into two well-greased 9 x 5-inch loaf pans.
  8. Bake at 350°F (175°C) for 1 hour or until tests done.
  9. Cool in pans for 15 minutes, then remove to a rack to cool completely before slicing.
  10. Serve with softened cream cheese.
