Ingredients

  • 3 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 1 cup shortening
  • 2 cups brown sugar
  • 2 eggs
  • 1 cup coffee
  • 2 teaspoons vanilla
  • 1 cup chopped dates
  • 1 cup nuts

Instructions

  1. Sift together the flour, baking powder, baking soda, cinnamon, and salt.
  2. Cream the shortening, brown sugar, and eggs until smooth.
  3. Add the flour mixture alternately with coffee to the creamed mixture, beginning and ending with the flour.
  4. Stir in the vanilla, chopped dates, and small pieces of nuts.
  5. Pour the batter into a greased 13 x 9-inch cake pan.
  6. Bake at 350°F until a cake tester inserted in the center comes out clean, about 30 minutes.
  7. Allow to cool, then sprinkle powdered sugar on top.
  8. Cut into bars and enjoy!
