  • 1 medium-size white onion
  • 1 lb. tomatoes
  • 2 cloves garlic
  • 2 large fresh Poblano chiles
  • 1 c. fresh corn kernels
  • 4 medium-size zucchini
  • 3 Tbsp. chopped fresh cilantro
  • 2/3 c. heavy cream

Instructions

  1. In large skillet, heat the vegetable oil over medium-high heat.
  2. Add the chopped onion and sauté for 8 minutes or until lightly browned.
  3. Add diced ham, diced chicken, diced celery, diced onions, and diced green peppers to the skillet.
  4. Stir in minced garlic, dried thyme, rubbed sage, cayenne pepper, white pepper, black pepper, salt, and bay leaves.
  5. Cook the mixture, stirring occasionally, for about 10 minutes.
  6. Add canned tomatoes with their liquid and cook for another 5 minutes.
  7. Stir in the rice and cook for 2-3 minutes to coat with the spices.
  8. Add 3 cups of reserved tomato liquid or water, bring to a boil.
  9. Reduce heat, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
  10. Meanwhile, in a separate pan, sauté the chopped white onion until translucent.
  11. Add chopped tomatoes, garlic, poblanos, corn, and zucchini; cook until vegetables are tender.
  12. Combine the cooked vegetables with the jambalaya mixture.
  13. Stir in heavy cream and chopped cilantro.
  14. Cook for an additional 5 minutes to heat through.
  15. Serve hot, garnished with additional cilantro if desired.
