Ingredients

  • 1 1/2 lb. ground meat
  • 1 1/2 c. soft bread crumbs
  • 2 Tbsp. chopped onion
  • 1/4 tsp. dry mustard
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg
  • 2 Tbsp. fat or oil
  • 1/3 c. milk
  • 1 c. pineapple chunk
  • 1/4 c. brown sugar
  • 1/2 tsp. ginger
  • 1/4 tsp. salt
  • 1 Tbsp. cornstarch
  • 1/4 c. vinegar
  • 1 Tbsp. soy sauce
  • 1 large tomato

Instructions

  1. Combine ground meat, bread crumbs, chopped onion, dry mustard, salt, pepper, beaten egg, and milk in a bowl.
  2. Shape the mixture into meat balls.
  3. Brown the meat balls in fat or oil in a skillet.
  4. Pour off any dripping fat.
  5. Drain pineapple chunks and reserve 1/2 cup pineapple juice.
  6. In a separate bowl, mix sugar, ginger, salt, and cornstarch.
  7. Add 1/2 cup pineapple juice, vinegar, and soy sauce to the dry mixture and cook, stirring constantly, until thickened.
  8. Add the sauce to the browned meat balls and cook for about 5 minutes.
  9. Add tomato wedges, green pepper strips, and pineapple chunks.
  10. Cook until heated through and serve.
