Oriental Stir-Fried Vegetables

Ingredients
- 1 1/2 lb. fresh broccoli ⓘ
- 4 Tbsp. oil ⓘ
- 1 c. chicken broth ⓘ
- 1 (16 oz.) can bean sprouts, drained ⓘ
- 1 (8 oz.) can water chestnuts, drained and sliced ⓘ
- 1/4 lb. fresh mushrooms, sliced
- 1/2 tsp. salt ⓘ
- 1 clove garlic, minced ⓘ
- 6 oz. frozen pea pods, thawed ⓘ
- 2 Tbsp. cornstarch ⓘ
- 1 tsp. sugar ⓘ
- 1 Tbsp. soy sauce
- 1/8 tsp. ginger ⓘ
Instructions
- Remove flowerets from broccoli and cut in half. Cut stalks into 2 x 1/4-inch strips.
- Heat oil in a 12-inch skillet over medium heat.
- Add broccoli and stir-fry for 1 minute.
- Add salt, garlic, and 1/2 cup of the chicken broth. Cover and cook for 3 minutes.
- Uncover and stir-fry for 3 minutes.
- Add bean sprouts, sliced water chestnuts, sliced mushrooms, and thawed pea pods; stir-fry for 2 minutes.
