Ingredients

  • 1 1/2 lb. fresh broccoli
  • 4 Tbsp. oil
  • 1 c. chicken broth
  • 1 (16 oz.) can bean sprouts, drained
  • 1 (8 oz.) can water chestnuts, drained and sliced
  • 1/4 lb. fresh mushrooms, sliced
  • 1/2 tsp. salt
  • 1 clove garlic, minced
  • 6 oz. frozen pea pods, thawed
  • 2 Tbsp. cornstarch
  • 1 tsp. sugar
  • 1 Tbsp. soy sauce
  • 1/8 tsp. ginger

Instructions

  1. Remove flowerets from broccoli and cut in half. Cut stalks into 2 x 1/4-inch strips.
  2. Heat oil in a 12-inch skillet over medium heat.
  3. Add broccoli and stir-fry for 1 minute.
  4. Add salt, garlic, and 1/2 cup of the chicken broth. Cover and cook for 3 minutes.
  5. Uncover and stir-fry for 3 minutes.
  6. Add bean sprouts, sliced water chestnuts, sliced mushrooms, and thawed pea pods; stir-fry for 2 minutes.
