Ingredients

  • 1/2 lb dried beans of choice
  • 1/2 lb chopped smoked ham
  • 3/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1/3 cup chopped green bell pepper
  • 1 to 2 tablespoons chopped fresh parsley
  • 2 bay leaves
  • 2 cloves garlic crushed (optional)
  • 1/4 cup butter or margarine
  • Black pepper to taste
  • Salt to taste
  • 2 teaspoons Worcestershire sauce
  • 4 to 6 drops Tabasco sauce

Instructions

  1. Cover the dried beans with water and soak overnight or at least 6 hours.
  2. Drain the soaked beans.
  3. Add ham, chopped onion, chopped celery, chopped green bell pepper, chopped parsley, bay leaves, and crushed garlic to the beans.
  4. Cover with water and bring to a boil.
  5. Reduce heat to low and cook for about 2 hours.
  6. Add butter or margarine, black pepper, salt, Worcestershire sauce, and Tabasco sauce.
  7. Continue cooking over low heat for an additional hour or until beans are tender.
  8. Remove bay leaves before serving.
