Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 cup sugar
  • 1/3 cup melted butter
  • 1 egg
  • 1/4 cup milk
  • 1 (8 oz.) can crushed pineapple, undrained
  • 1/3 cup chopped dried apricots
  • 1/4 cup raisins
  • 1 cup chopped pecans

Instructions

  1. Combine the all-purpose flour, baking powder, salt, and baking soda; set aside.
  2. Combine sugar, melted butter, and egg; beat well.
  3. Add milk, undrained crushed pineapple, chopped dried apricots, and raisins; beat well.
  4. Stir in the flour mixture and chopped pecans.
  5. Pour the batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  6. Bake at 350°F (175°C) for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean.
  7. Cool for 10 minutes in the pan on a wire rack.
  8. Remove from the pan and let cool completely before slicing.
