Ingredients

  • 1/2 cup Crisco
  • 2 cups sugar
  • 2 eggs
  • 3 cups flour
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup buttermilk
  • 1 small can crushed pineapple, well drained
  • 1 small jar maraschino cherries, drained and chopped
  • 1 cup chopped pecans

Instructions

  1. Cream Crisco and sugar until light and fluffy.
  2. Beat in eggs one at a time.
  3. Sift together flour, allspice, nutmeg, baking powder, and baking soda.
  4. Gradually add dry ingredients to the creamed mixture alternately with buttermilk, beginning and ending with dry ingredients.
  5. Stir in crushed pineapple, chopped maraschino cherries, and chopped pecans.
  6. Pour batter into a greased baking pan.
  7. Bake at 350°F (175°C) for about 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Garnish with reserved maraschino cherries before serving.
