- Dice the pork loin, pork fat, black mushrooms, and bamboo shoot. Place in a mixing bowl.
- Add the remaining ingredients: cooking wine, sesame oil, sugar, salt, and pepper. Stir in the same direction until well mixed.
- Throw the mixture against the inside of the bowl for 3 to 4 minutes to thoroughly combine the ingredients.
- Divide the mixture into 24 portions and use each to fill a wonton skin to make Shau Mai.
