Pork Shau Mai are flavorful Chinese dumplings filled with seasoned minced pork, black mushrooms, and bamboo shoots, perfect for dim sum lovers or appetizer enthusiasts.

Ingredients

  • 3/4 lb. pork loin
  • 1 1/3 oz. pork fat
  • 4 pre-softened Chinese black mushrooms
  • 1 precooked bamboo shoot
  • 1 1/2 Tbsp. cornstarch
  • 1 Tbsp. cooking wine
  • 1/2 Tbsp. sesame oil
  • 1 tsp. sugar
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 30 won ton skins
  • 24 green peas

Instructions

  1. Dice the pork loin, pork fat, black mushrooms, and bamboo shoot. Place in a mixing bowl.
  2. Add the remaining ingredients: cooking wine, sesame oil, sugar, salt, and pepper. Stir in the same direction until well mixed.
  3. Throw the mixture against the inside of the bowl for 3 to 4 minutes to thoroughly combine the ingredients.
  4. Divide the mixture into 24 portions and use each to fill a wonton skin to make Shau Mai.
