Ingredients
- 1 1/2 cups flour ⓘ
- 1 teaspoon baking soda ⓘ
- 1/4 teaspoon salt ⓘ
- 1/3 cup butter ⓘ
- 1 cup packed dark brown sugar ⓘ
- 1 cup granulated sugar ⓘ
- 1/3 cup cooking oil
- 2 eggs ⓘ
- 1 teaspoon vanilla ⓘ
- 1 1/2 cups oatmeal ⓘ
- 1 cup coconut ⓘ
- 1 cup raisins ⓘ
- 1 cup semi-sweet chocolate pieces ⓘ
- 1/2 cup chopped walnuts ⓘ
Instructions
- In a bowl, stir together flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat butter with an electric mixer for 30 seconds.
- Beat in brown sugar, granulated sugar, cooking oil, eggs, and vanilla until well combined.
- Add the flour mixture to the wet ingredients and mix until smooth.
- Stir in oatmeal, coconut, raisins, chocolate pieces, and chopped walnuts.
- Drop rounded teaspoonfuls of dough 2 inches apart onto an ungreased cookie sheet.
- Bake in a preheated 325°F oven for 10 to 12 minutes, until edges are lightly browned.
- Cool for 1 minute on the cookie sheet before removing to cooling racks.
