Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup butter
  • 1 cup packed dark brown sugar
  • 1 cup granulated sugar
  • 1/3 cup cooking oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups oatmeal
  • 1 cup coconut
  • 1 cup raisins
  • 1 cup semi-sweet chocolate pieces
  • 1/2 cup chopped walnuts

Instructions

  1. In a bowl, stir together flour, baking soda, and salt. Set aside.
  2. In a large mixing bowl, beat butter with an electric mixer for 30 seconds.
  3. Beat in brown sugar, granulated sugar, cooking oil, eggs, and vanilla until well combined.
  4. Add the flour mixture to the wet ingredients and mix until smooth.
  5. Stir in oatmeal, coconut, raisins, chocolate pieces, and chopped walnuts.
  6. Drop rounded teaspoonfuls of dough 2 inches apart onto an ungreased cookie sheet.
  7. Bake in a preheated 325°F oven for 10 to 12 minutes, until edges are lightly browned.
  8. Cool for 1 minute on the cookie sheet before removing to cooling racks.
