Ingredients

  • 2 cups cooked pinto beans, well drained, mashed
  • 1 stick margarine, melted
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 2 eggs
  • 1 cup sifted flour
  • 1/2 cup chopped nuts
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 cup seedless raisins
  • 2 teaspoons vanilla
  • 2 cups finely chopped apples, peeled

Instructions

  1. Soak the pinto beans overnight, then cook in water until tender enough to mash with a fork.
  2. Cream the melted margarine and sugar together.
  3. Add vanilla and eggs to the creamed mixture and beat in the mashed beans.
  4. Sift together the flour, cinnamon, allspice, soda, and salt, then stir into the bean mixture.
  5. Fold in the raisins, chopped apples, and chopped nuts.
  6. Pour the batter into a prepared baking dish and bake until a toothpick inserted into the center comes out clean.
