Ingredients

  • 1 cup pumpkin
  • 1/2 cup mashed ripe banana
  • 1 cup brown sugar
  • 1/2 cup oil
  • 2 eggs
  • 2 1/4 cups flour
  • 1 tablespoon baking powder
  • 1/2 tablespoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 tablespoon ginger
  • 1/4 tablespoon salt
  • 1 1/2 cups chopped nuts

Instructions

  1. Combine pumpkin, mashed banana, brown sugar, and oil in a large bowl.
  2. Beat well until mixture is smooth.
  3. Beat in eggs one at a time.
  4. Incorporate the flour, baking powder, baking soda, cinnamon, ginger, and salt into the mixture.
  5. Stir in the chopped nuts.
  6. Pour batter into a greased 9 x 5 x 13-inch loaf pan.
  7. Bake in a preheated oven at 325°F (160°C) for about 1 hour or until a toothpick inserted in the center comes out clean.
  8. Cool for 5 minutes in the pan.
  9. Remove from the pan and let cool completely before serving.
  10. Decorate with powdered sugar glaze if desired.
