Ingredients

  • 2 c. plain flour
  • 1 c. butterscotch morsels
  • 1 tsp. baking soda
  • 3/4 c. butter Crisco
  • 2/3 c. sugar
  • 2/3 c. brown sugar
  • 1 egg
  • 1/2 c. cooked or canned pumpkin
  • 1 c. quick cooking oats
  • 1 c. white chocolate chunks
  • 2/3 c. chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line cookie sheets with aluminum foil.
  3. In a food processor fitted with a steel blade, combine flour and butterscotch morsels.
  4. Process until butterscotch chips are as fine as the flour.
  5. Pour into a large bowl; add baking soda, Crisco, sugar, brown sugar, egg, and pumpkin.
  6. Beat until well mixed.
  7. Stir in oats, white chocolate chunks, and chopped walnuts.
  8. Drop by teaspoons onto the foil-lined cookie sheets, spacing 2 inches apart.
  9. Bake for 12 to 14 minutes or until golden brown.
  10. Remove immediately and cool on racks.
  11. Store in an airtight container.
