Ingredients

  • 1 2/3 cups sifted flour
  • 1 1/3 cups sugar
  • 1/4 teaspoon baking powder
  • 1 teaspoon soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/3 cup soft shortening
  • 1/3 cup water
  • 2/3 cup raisins
  • 1/3 cup chopped nuts
  • 1 cup cooked pumpkin
  • 1 large egg

Instructions

  1. Preheat oven to 350°F.
  2. Grease well a 2-quart ring mold.
  3. Sift dry ingredients into a bowl.
  4. Add shortening, water, nuts, raisins, and pumpkin to the dry ingredients.
  5. Beat for 2 minutes at medium speed, scraping the bowl constantly.
  6. Add the egg and beat for 2 more minutes, scraping again.
  7. Pour the batter into the prepared mold.
  8. Bake for 40 to 45 minutes.
  9. Serve warm with lemon sauce or whipped cream.
