Ingredients

  • 1 1/2 cups instant rice
  • 15 1/2 oz. jar 4-Bean Salad
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • pinch of ground hot red pepper
  • 2 green onions
  • 2 oz. Cheddar cheese
  • 1 to 2 tsp. vinegar
  • lettuce leaves
  • 2 tomatoes
  • 8 oz sliced roast beef

Instructions

  1. Prepare rice following the package directions and let it cool.
  2. Drain the bean salad, reserving 1/2 cup of the marinade.
  3. In a small bowl, combine the reserved marinade, olive oil, salt, black pepper, and ground hot red pepper to make the dressing.
  4. In a large bowl, mix the drained bean salad, cooked rice, sliced green onions, and diced Cheddar cheese.
  5. Pour the dressing over the mixture and add 1 to 2 teaspoons of vinegar.
  6. Refrigerate the salad until ready to serve.
