Ingredients

  • 1-1/2 lb. ground beef
  • 2 large onions, diced
  • 2 large garlic cloves, minced
  • 1/2 large green pepper, diced
  • 3 stalks celery, diced
  • 1 Tbsp. dried parsley
  • 1 Tbsp. soy sauce
  • 3/4 tsp. pepper
  • 1 large can (46 oz.) tomato juice
  • 2 c. water
  • 1 large potato, peeled and diced
  • 2 c. coarsely cut cabbage
  • 1 can (15 oz.) kidney beans
  • 1 pkg. (20 oz.) frozen mixed vegetables
  • 1 Tbsp. Italian spices

Instructions

  1. Saute ground beef in an 8-quart pot until browned.
  2. Add diced onions and minced garlic, cook until softened.
  3. Drain off excess fat from the mixture.
  4. Add all remaining ingredients in the order listed: green pepper, celery, parsley, soy sauce, pepper, tomato juice, water, diced potato, cabbage, kidney beans, frozen mixed vegetables, and Italian spices.
  5. Bring the mixture to a boil.
  6. Reduce heat to low and let simmer for about 30 minutes, stirring frequently.
  7. Serve hot, ideally with corn muffins.
