Ingredients

  • 1 (9-inch) double crust
  • 1 can salmon, drained and flaked
  • 1 Tbsp minced celery
  • 1 Tbsp flour
  • 3 eggs
  • 1 Tbsp Parmesan cheese
  • 1 1/2 cups shredded Swiss cheese
  • 1 Tbsp minced onion
  • 1 Tbsp minced parsley
  • 1/2 tsp salt
  • 1 cup light cream

Instructions

  1. Make enough pastry for a 9-inch double pie; roll out the pastry and cut into twelve 5-inch circles.
  2. Set each pastry circle loosely into large 3-inch muffin cups and chill.
  3. In a bowl, toss together Swiss cheese, salmon, minced onion, minced celery, minced parsley, flour, and salt.
  4. Spoon the cheese and salmon mixture into the pastry shells.
  5. In a separate bowl, beat the eggs and light cream together.
  6. Pour the egg mixture over the cheese and salmon in each shell.
  7. Sprinkle each mini quiche with Parmesan cheese.
  8. Bake in a 375°F oven for 30 to 35 minutes or until set.
