Ingredients

  • 16 small fresh link pork sausages
  • 1/2 medium green pepper, chopped
  • 1/2 medium sweet red pepper, chopped
  • 1 Tbsp cooking oil
  • 3 c cooked long grain rice
  • 2 Tbsp chopped fresh parsley
  • 1 tsp dried basil
  • 4 to 5 medium tomatoes, peeled and chopped
  • 1 (10 oz) pkg frozen corn, thawed
  • 1 c shredded Cheddar cheese
  • 1 Tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 c soft bread crumbs
  • 2 Tbsp butter or margarine, melted

Instructions

  1. Place sausages on a rack in a baking pan.
  2. Bake at 350° for 15 minutes or until lightly browned. Cut into 1-inch pieces.
  3. Set aside.
  4. In a skillet, saute peppers in oil for 3 minutes. Place in a 3-quart casserole.
  5. Add the sausages and the next 8 ingredients. Combine bread crumbs and butter. Sprinkle on top of casserole.
  6. Bake, uncovered, at 350° for 30 to 40 minutes or until heated through.
