Ingredients

  • 1 lb. summer squash
  • 1/3 cup saltines, crumbled
  • 1 onion, chopped
  • 1 tablespoon butter, melted
  • 1/2 cup celery, finely diced
  • 1/2 cup Cheddar cheese, grated
  • 3 tablespoons chopped green chilies
  • 2 eggs, lightly beaten
  • 1 1/4 cups milk
  • 1 1/4 teaspoons salt
  • dash of pepper

Instructions

  1. Cook the squash, drain, and mash.
  2. Saute the chopped onion and finely diced celery in melted butter.
  3. In a mixing bowl, combine the mashed squash, sautéed vegetables, crumbled saltines, grated Cheddar cheese, chopped green chilies, beaten eggs, milk, salt, and pepper.
  4. Pour the mixture into a greased baking dish.
  5. Bake at 375°F for 25 minutes until golden brown and set.
