Ingredients

  • 3/4 cup bread crumbs
  • 1/4 cup Parmesan cheese
  • 4 tablespoons butter
  • 2 tablespoons margarine
  • 2 stalks celery
  • 1 1/2 medium onions
  • 6 tablespoons flour
  • 1 cup milk
  • 1/2 cup white wine
  • 4 ounces Cheddar cheese
  • 1 pound bay scallops

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the topping by combining bread crumbs and Parmesan cheese in a bowl.
  3. Melt butter and margarine in a medium saucepan.
  4. Saute celery and onions in the melted butter and margarine until tender.
  5. Blend in flour to make a paste; cook for 1 minute over medium heat.
  6. Gradually add milk, stirring after each addition.
  7. Stir in white wine into the sauce.
  8. Add sliced Cheddar cheese and stir until melted.
  9. Fold in the scallops gently.
  10. Pour the mixture into a greased 2-quart casserole dish.
  11. Sprinkle the breadcrumb and Parmesan topping evenly over the casserole.
  12. Bake for 25 minutes or until bubbly and golden on top.
  13. Serve hot over rice.
