Ingredients

  • Instant mashed potatoes for 6 servings
  • 1 egg
  • 1 lb. ground beef
  • 1 onion, chopped
  • 2/3 cup frozen sliced carrots, thawed
  • 2 tablespoons all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 2 teaspoons salt, divided
  • 1 cup beef broth
  • 1/2 teaspoon pepper, divided

Instructions

  1. Cook the instant mashed potatoes according to package directions.
  2. In a large skillet, cook the ground beef and chopped onion over medium-high heat, stirring until the beef crumbles and loses its pink color.
  3. Drain excess fat, then return the beef and onion to the skillet.
  4. Add the thawed sliced carrots to the beef mixture.
  5. Stir in the flour, 1 teaspoon of salt, and 1/4 teaspoon of pepper.
  6. Pour in the beef broth and cook, stirring until the mixture is slightly thickened.
  7. Spoon the beef mixture into a lightly greased 11x17 inch dish.
  8. In a bowl, beat the egg and stir into the cooked mashed potatoes along with the remaining 1 teaspoon of salt and 1/4 teaspoon of pepper.
  9. Spread the mashed potatoes evenly over the beef mixture.
  10. Bake at 350°F (175°C) for 25 minutes.
  11. Sprinkle shredded cheddar cheese over the top and bake for an additional 5 minutes until cheese is melted and bubbly.
