Ingredients

  • 4 lb. boneless beef chuck roast
  • 3 Tbsp. vegetable oil
  • 2 large onions
  • 1 c. ketchup
  • 1 c. beef broth
  • 2/3 c. chili sauce
  • 1/4 c. cider vinegar
  • 1/4 c. packed brown sugar
  • 3 Tbsp. Worcestershire sauce
  • 2 Tbsp. prepared mustard
  • 2 Tbsp. molasses
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/8 tsp. pepper
  • 1 Tbsp. liquid smoke (optional)
  • 12 to 16 kaiser rolls or hamburger buns

Instructions

  1. In a Dutch oven, brown the beef chuck roast on all sides in 1 tablespoon of vegetable oil.
  2. Remove the roast and set aside.
  3. In the same pot, add chopped onions and cook until softened.
  4. Return the roast to the pot.
  5. In a bowl, mix together ketchup, beef broth, chili sauce, cider vinegar, brown sugar, Worcestershire sauce, prepared mustard, molasses, lemon juice, salt, cayenne pepper, and pepper.
  6. Pour the sauce mixture over the roast.
  7. Add liquid smoke if using.
  8. Cover the Dutch oven and cook in a preheated oven at 325°F (160°C) for about 3 hours, or until the meat is tender and easily shredded.
  9. Remove the roast from the pot and shred with two forks.
  10. Return the shredded meat to the sauce and stir to combine.
  11. Serve on kaiser rolls or hamburger buns.
