Ingredients

  • 1 c. chicken broth
  • 1/2 c. butter
  • 2 qt. fresh mushrooms
  • 3 Tbsp. minced parsley
  • 1 lb. peeled shrimp
  • 1/2 c. flour
  • 1 Tbsp. grated onion
  • 1 c. unseasoned croutons
  • 3 Tbsp. lemon juice
  • 4 fish (1 to 1 1/2 lb. each), cleaned and dressed
  • 6 Tbsp. grated Parmesan cheese
  • 1 c. white wine
  • 1 c. light cream
  • 3/4 tsp. salt

Instructions

  1. Heat chicken broth, lemon juice, and 3 tablespoons of butter in a skillet.
  2. Arrange the cleaned and dressed fish in the broth mixture and simmer for 3 minutes.
  3. Place the fish in a baking dish.
  4. In a separate pan, sauté sliced mushrooms with remaining butter until tender.
  5. Mix cooked mushrooms, minced parsley, peeled shrimp, flour, grated onion, croutons, grated Parmesan cheese, white wine, light cream, and salt to prepare the stuffing.
  6. Stuff the fish with the mushroom and shrimp mixture.
  7. Bake the stuffed fish in a preheated oven at 375°F (190°C) for 15-20 minutes or until the fish is cooked through.
  8. Serve hot, garnished with additional parsley if desired.
