Snowbound Casserole

Ingredients
- 1 to 2 (6 oz.) cans chicken or leftovers ⓘ
- 1 small can evaporated milk ⓘ
- 1 can cream of chicken soup ⓘ
- 1 can chicken noodle soup ⓘ
- 2 cans Chinese rice noodles or chow mein noodles ⓘ
- 1 medium onion, chopped ⓘ
- 1/2 cup celery, chopped ⓘ
- 1 tablespoon margarine ⓘ
- 1 (8 oz.) can tomato sauce ⓘ
- 1/2 teaspoon salt ⓘ
- cooked rice ⓘ
- 1/2 teaspoon curry powder ⓘ
- 1/8 teaspoon pepper ⓘ
- 1 cup green pepper, chopped ⓘ
Instructions
- In a large skillet or electric frying pan, sauté onion and celery until soft.
- Stir in tomato sauce, salt, curry powder, pepper, and green pepper.
- Add hot sauce to taste if desired.
- Combine cooked chicken, evaporated milk, cream of chicken soup, chicken noodle soup, and noodles in a casserole dish.
- Mix in the sautéed vegetable mixture.
- Add cooked rice and stir well.
- Bake in the oven at 350°F (175°C) for 20-30 minutes until heated through and bubbly.
