Ingredients

  • 6 oz. cornbread mix (2 packages)
  • 1 cup chopped celery
  • 1/2 cup chopped green pepper (optional)
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 cup butter or margarine
  • chicken or turkey giblets
  • 3 slices bread
  • 10 3/4 oz. can chicken broth
  • 3 eggs, slightly beaten
  • 1/2 teaspoon salt

Instructions

  1. Cook the hen and reserve the broth.
  2. Allow the hen to cool, then cut into small pieces.
  3. Place these pieces on the bottom of a well-buttered 9 x 12-inch Pyrex dish.
  4. Prepare cornbread mix according to package instructions and bake.
  5. Chop the bread slices and set aside.
  6. In a large skillet, melt butter and sauté chopped celery, green pepper (if using), chopped onion, and minced garlic until tender.
  7. Combine cooked cornbread, bread pieces, sautéed vegetables, chopped hen, chicken broth, beaten eggs, and salt in a large bowl.
  8. Mix well to combine and adjust the consistency with additional broth if needed.
  9. Transfer the mixture to the prepared dish and bake at 350°F (175°C) for about 30-40 minutes until golden brown.
