- Cook the hen and reserve the broth.
- Allow the hen to cool, then cut into small pieces.
- Place these pieces on the bottom of a well-buttered 9 x 12-inch Pyrex dish.
- Prepare cornbread mix according to package instructions and bake.
- Chop the bread slices and set aside.
- In a large skillet, melt butter and sauté chopped celery, green pepper (if using), chopped onion, and minced garlic until tender.
- Combine cooked cornbread, bread pieces, sautéed vegetables, chopped hen, chicken broth, beaten eggs, and salt in a large bowl.
- Mix well to combine and adjust the consistency with additional broth if needed.
- Transfer the mixture to the prepared dish and bake at 350°F (175°C) for about 30-40 minutes until golden brown.
