Ingredients

  • 1 1/2 lb. beef, cut in thin strips
  • 1/4 c. soy sauce
  • 1 tsp. chopped garlic
  • 1 tsp. ground ginger
  • 1/4 c. oil
  • 1 medium onion, coarsely chopped
  • 1 green pepper, coarsely chopped
  • 4 ribs celery, sliced at angle
  • 2 c. broccoli florets
  • 2 c. sliced water chestnuts
  • 8 oz. sliced mushrooms
  • 1/2 c. bean sprouts
  • 2 Tbsp. cornstarch
  • 2 c. water
  • 6 c. rice, cooked

Instructions

  1. Combine soy sauce, chopped garlic, and ground ginger in a bowl and stir well.
  2. Add beef strips to the marinade, toss to coat, and set aside to marinate while preparing the vegetables.
  3. Heat oil in a large pan or wok until very hot.
  4. Add beef strips and cook over high heat, tossing until browned and tender, about 15 to 20 minutes.
  5. Reduce heat and add chopped onion, chopped green pepper, sliced celery, broccoli florets, and sliced water chestnuts.
  6. Cook while tossing until vegetables are tender-crisp, about 10 minutes.
  7. Add sliced mushrooms and bean sprouts to the pan.
  8. Mix cornstarch with water to create a slurry and pour into the pan.
  9. Stir and cook until the sauce thickens.
  10. Serve the beef and vegetable mixture over cooked rice.
