Ingredients

  • 10 oz. frozen spinach
  • 10 oz. frozen spinach
  • 6 slices bacon
  • 1 lb. lean ground beef
  • 1 onion
  • 1 tsp. garlic salt
  • 1/2 tsp. salt
  • 1/4 lb. fresh mushrooms
  • 8 oz. can tomato sauce
  • 1 c. sour cream
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 8 oz. cottage cheese
  • 4 beaten eggs
  • 2/3 c. Parmesan cheese

Instructions

  1. Squeeze liquid out of the thawed spinach.
  2. Brown the ground beef and chopped onion in a large skillet.
  3. Add garlic salt, salt, and pepper; cook until beef is browned.
  4. Stir in sliced mushrooms and cook over low heat for 5 minutes, then drain off all liquid.
  5. In a large bowl, combine tomato sauce, sour cream, basil, oregano, cottage cheese, and beaten eggs.
  6. Stir in the cooked bacon, drained spinach, and meat mixture.
  7. Add 1/2 cup Parmesan cheese and 2/3 cup Cheddar cheese; mix well.
  8. Spoon the mixture into a lightly greased 9 x 13-inch baking dish.
  9. Sprinkle remaining Parmesan and Cheddar cheeses on top.
  10. Cover and refrigerate overnight.
  11. Bake uncovered at 350°F (175°C) for 30 minutes before serving.
