Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 cups grated summer squash
  • 1/2 cup applesauce
  • 1/4 cup orange juice
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped raisins
  • cream cheese frosting

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add eggs, grated squash, applesauce, and orange juice; beat well.
  3. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, cloves, and nutmeg.
  4. Gradually add dry ingredients to squash mixture, blending well.
  5. Stir in chopped walnuts and raisins.
  6. Pour batter into a greased 9 x 13-inch baking pan.
  7. Bake in a 350°F (175°C) oven for 45 minutes.
  8. Allow to cool, then frost with cream cheese frosting or sprinkle with sifted confectioners' sugar.
