Ingredients

  • 3 Tbsp. butter or margarine
  • 1/2 small onion, chopped
  • 1 Tbsp. chopped fresh parsley
  • 1/2 tsp. dried basil
  • 2 medium zucchini, shredded
  • 3 slices white bread, torn into coarse crumbs
  • 1 egg
  • 3/4 cup shredded Swiss cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 4 chicken breast halves with bones and skin

Instructions

  1. In a skillet, melt butter or margarine over medium heat. Saute chopped onion, chopped parsley, and dried basil until the onion is tender.
  2. Add shredded zucchini and cook for 2 minutes.
  3. Remove from heat; stir in torn bread crumbs, egg, shredded Swiss cheese, salt, and pepper.
  4. Carefully loosen the skin on each chicken breast to form a pocket.
  5. Stuff the zucchini mixture into the pockets of each chicken breast.
  6. Bake at 375°F for 50 to 60 minutes or until the chicken is done.
