Ingredients

  • 1 1/2 pounds mild sausage
  • 3/4 pound Cheddar cheese, grated
  • 5 eggs
  • 2 1/3 cups milk
  • 1 Tbsp. Dijon mustard
  • 1 tsp. dry mustard
  • 1 tsp. ground nutmeg

Instructions

  1. Remove crust from bread slices.
  2. Butter one side of each bread slice with softened butter and set aside.
  3. Melt 1/2 cup butter in a skillet.
  4. Add sliced mushrooms and onions to the skillet and sauté over medium heat for 5 to 8 minutes until tender.
  5. Season the mushroom and onion mixture with salt and pepper, then drain and set aside.
  6. Cook the sausage until browned, then drain and break into bite-sized pieces.
  7. In a buttered 7 x 11-inch shallow pan, layer half of the bread slices with the buttered side down.
  8. Spread half of the mushroom and onion mixture over the bread.
  9. Add half of the cooked sausage on top.
  10. Sprinkle with half of the grated Cheddar cheese.
  11. Repeat the layering with the remaining bread, mushroom mixture, sausage, and cheese.
  12. In a bowl, whisk together eggs, milk, Dijon mustard, dry mustard, and ground nutmeg.
  13. Pour the egg mixture evenly over the layered ingredients in the pan.
  14. Bake in a preheated oven at 350°F (175°C) for about 30 minutes until the casserole is set and golden.
  15. Serve hot, sliced into portions.
