Ingredients

  • 3/4 cup milk
  • 2 tablespoons shortening
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon grated lemon rind
  • 1 package yeast
  • 1/4 cup warm water
  • 2 3/4 cups flour
  • 1 egg, beaten
  • 1/4 cup raisins
  • 1/2 cup fruitcake mix
  • 2 tablespoons melted butter
  • confectioners sugar icing
  • 1/3 cup chopped nuts

Instructions

  1. Scald the milk; stir in shortening, sugar, salt, and lemon rind. Cool to lukewarm.
  2. Dissolve yeast in warm water.
  3. Add the milk mixture, beaten egg, and 1 cup of flour to the yeast mixture.
  4. Beat thoroughly until smooth.
  5. Add raisins and fruitcake mix; stir in enough flour to make a soft dough.
  6. Turn out onto a floured board and knead until smooth and elastic.
  7. Place in a greased bowl and turn to coat the top with grease.
  8. Cover and let rise until double in size, about 1 1/2 hours.
  9. Punch down the dough, turn out onto a floured board.
  10. Cover and let rest for 10 minutes.
  11. Roll into an oval about 3/4 inch thick.
  12. Brush half of the oval with melted butter and fold over.
  13. Place on a greased cookie sheet.
  14. Cover and let rise until double in size, about 45 minutes.
  15. Bake at 350°F (175°C) for about 30 minutes.
  16. Spread icing lightly over the bread and sprinkle with chopped nuts.
